INGREDIENTS: 1 medium head of green cabbage1/4 head of red cabbage 1 green bell pepper 1 red bell pepper 1 large carrot 1/3 c. chives 1/3 c. fresh parsley For dressing ~ 3/4 c. mayonnaise 3 T. sugar 1 T. seasoning salt (I use Jane's Krazy Mixed-up Salt ) 1/2 tsp. coarsely ground black pepper 1 tsp. lemon-pepper seasoning 4 t. white vinegar (plus a dash or two if needed) METHOD: In a medium non-reactive bowl blend dressing ingredients together, and allow mixture to sit in refrigerator so that flavors blend and sugar begins to dissolve. Finely chop cabbage, and place difficult-to-slice end and corner pieces into Cuisinart. Finely chop cabbage pieces in Cuisinart and place cabbage in large non-reactive bowl. Finely julienne slice peppers and carrot ~ or slice peppers and carrot into quarters or sixths, place pieces into Cuisinart and finely chop (being careful not to liquefy peppers). Blend in with cabbage. Finely chop parsley leaves and chives and add to cabbage mixture. Slowly stir dressing to cabbage mixture, adding only enough dressing to cover cabbage. Allow coleslaw to sit in refrigerator at least one hour before serving so that flavors marry. Mix well before serving, and adjust dressing and seasonings as needed.
Serves 8 - 10.
