Grandpa Jack's Sunday Buttermilk Pancakes

There's nothing like a short stack of Grandpa's buttermilk pancakes! 

 

DRY INGREDIENTS:

2 c. all purpose flour
1 T. sugar
1 T. yellow cornmeal
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
 
WET INGREDIENTS:

2 eggs
2 c buttermilk
2 T. melted butter
 
In a large bowl, combine dry ingredients. In medium bowl, beat eggs lightly, then add the buttermilk and melted butter.
 
Pour the buttermilk mixture over the dry ingredients and stir just until all flour is moistened (the batter will be a little lumpy and THICK).
Wait until ready to cook before mixing wet and dry ingredients, and try not to mix the batter too much.
 
Drop batter about 1/4 cup at a time (we like big pancakes) onto hot greased griddle and cook pancakes until bubbles form and break on top.
